Welcome back to learning more than you could have expected about french fries. At least you are learning about my opinions on french fries. If you remember from my first post, my opinions are facts. Today I’d like to discuss recent changes in fries for two places: Frisch’s and Cracker Barrel.
Frisch’s recently made a big deal out of changing their fries to a crinkle cut style. Apparently this was the original style of the fries served by Frisch’s when they first started up. Ends up they made a great choice. Their previous style of fries were a straight cut meaty fry that often would be under cooked or they would be clammy after sitting too long before serving. This new style allows a consistency that Frisch’s never had before. A nice golden crinkle that keeps the heat in while having a good crisp exterior. The inside remains soft, and they smartly do not add seasoning (never add seasoning unless it is salt). This Fry is worthy of induction to my top 10 list.

Cracker Barrel is a different story altogether. This is a place where most people are going for breakfast food. I used to proudly tell people to change their habits to go there for the fries. Their fries used to be a nearly perfect steak fry. The only complaint I used to have was that you only were served so many. I heard rumors that their fries had changed. Unfortunately the rumors were true. They have abandoned the steak fry to go to what I could best describe as a Wendy’s or Applebee’s style fry. You know one that is a wannabe fresh cut fry. Each fry has a bit of potato skin on the end almost like they are trying to convince you that the fries are fresh. Instead they are a plain dry fry that is devoid of taste and quality. The steak fry held in the great taste of the Cracker Barrel grease. These fries do not. What was a top 3 fry has now dropped completely off the list. Keep going to Cracker Barrel. Just make sure you order breakfast.
